Ingredients
- 1 lb boneless skinless chicken breast
- 1 tbsp olive oil
- 1 tsp garlic powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 2 hearts romaine lettuce
- 1/2 cup grated Parmesan cheese
- 1/2 cup plain nonfat Greek yogurt
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp anchovy paste
- 1 clove minced garlic
- 4 single-serve tortilla chip bags
- 1 cup cherry tomatoes
Instructions
- 1Pat the chicken dry and season both sides evenly with garlic powder, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat until it shimmers.
- 2Add the chicken and cook undisturbed for 5 to 6 minutes until the underside is golden brown. Flip and continue cooking 5 to 6 minutes more until the internal temperature reaches 165°F and juices run clear.
- 3Transfer chicken to a cutting board and rest 5 minutes so the juices redistribute. Slice or dice into bite-size pieces while still warm.
- 4Meanwhile, whisk Greek yogurt, lemon juice, Dijon, anchovy paste, minced garlic, and half the Parmesan in a bowl until smooth and creamy; taste and adjust salt if needed.
- 5Chop the romaine into sturdy bite-size ribbons and halve the cherry tomatoes. Toss the lettuce with most of the dressing so every leaf is lightly coated.
- 6Open each single-serve chip bag carefully along the top seam without crushing the chips. Spoon a generous layer of dressed romaine into each bag.
- 7Top the greens with warm chicken pieces, cherry tomatoes, and the remaining Parmesan. Drizzle any leftover dressing over the top.
- 8Gently shake each bag once or twice to nestle the toppings among the chips. Serve immediately with a fork so the chips stay crunchy against the creamy Caesar and chicken.
