- 2Toast the sourdough slices in a dry skillet or toaster until the edges are golden and the surfaces feel crisp but still soft in the center.
- 3Spread a generous layer of whipped feta evenly over one side of every toast slice, reaching all the way to the crust.
- 4Arrange drained tomato slices in a single overlapping layer on four of the feta-covered toasts, then drizzle each stack lightly with olive oil.
- 5Scatter fresh basil leaves and a small handful of arugula over the tomatoes so every bite gets peppery greens and herbal perfume.
- 6Drizzle hot honey in thin zigzags across the greens and tomatoes, then finish with flaky salt and cracked pepper.
- 7Cap each sandwich with the remaining feta-spread toast, press gently, and slice on the diagonal with a sharp serrated knife.
