- 8 thick slices crusty sourdough bread
- 8 oz block feta cheese
- 1/3 cup whole-milk Greek yogurt
- 3 tbsp extra-virgin olive oil
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1/2 tsp black pepper
- 1.5 lb mixed colors heirloom tomatoes
- 1 tsp flaky sea salt
- 1/2 cup fresh basil leaves
- 3 tbsp hot honey
- 1/4 cup toasted pine nuts
Instructions
- 1Preheat the oven to 400°F and line a sheet pan with parchment. Arrange the bread slices in a single layer and brush lightly with olive oil on both sides. Toast 8–10 minutes, flipping once, until golden and crisp at the edges but still slightly chewy in the center.
- 2While the bread toasts, crumble the feta into a food processor. Add the Greek yogurt, remaining olive oil, lemon zest, lemon juice, and black pepper. Blend 45–60 seconds until completely smooth and fluffy, scraping the bowl once. Taste and adjust brightness if needed.
- 3Core the heirloom tomatoes and slice into thick ½-inch rounds or wedges, keeping different colors separate for visual appeal. Lay them on a plate and sprinkle lightly with flaky sea salt so they release a little juice.
- 4Spread a generous swoosh of whipped feta over each warm toast, covering edge to edge. Nestle the salted tomato slices on top, overlapping slightly and alternating colors.
- 5Tear the basil leaves over the tomatoes. Drizzle hot honey in thin ribbons so it pools in the tomato crevices. Scatter toasted pine nuts for crunch.
