- 8 oz feta cheese
- 1/3 cup whole-milk Greek yogurt
- 3 Tbsp extra-virgin olive oil
- 3 Tbsp hot honey
- 1/2 cup fresh basil leaves
- 1 tsp flaky sea salt
- 1/2 tsp freshly ground black pepper
- 1 garlic clove
Instructions
- 1Preheat the oven to 400°F and line a sheet pan with parchment. Arrange the bread slices in a single layer and toast until the edges are deep golden and the centers are crisp, about 8 to 10 minutes, flipping once halfway.
- 2While the bread toasts, crumble the feta into a food processor. Add the Greek yogurt and a drizzle of olive oil, then blend until completely smooth and fluffy, scraping the bowl once. Taste and adjust with black pepper.
- 3Rub one side of each warm toast lightly with the cut side of the garlic clove so it picks up aroma without overpowering.
- 4Spread a generous layer of the whipped feta over the garlicky side of every toast, going all the way to the edges.
- 5Core and slice the heirloom tomatoes into thick rounds or half-moons, aiming for pieces that will sit flat on the toast.
- 6Shingle the tomato slices over the feta, overlapping slightly so every bite has tomato. Drizzle the remaining olive oil evenly across the tops.
- 7Scatter torn basil leaves over the tomatoes, then finish with flaky sea salt, several grinds of black pepper, and a zigzag of hot honey.
