Grilled Peach & Heirloom Tomato Caprese Lunch Salad

Named for the island of Capri, classic Caprese pairs tomatoes, mozzarella, and basil. Here grilled peaches join heirloom tomatoes and fresh mozzarella, finished with basil, arugula, and balsamic glaze for a sunny lunch salad.

Ingredients

  • 3 large ripe peaches
  • 1.5 lb heirloom tomatoes
  • 8 oz fresh mozzarella balls (ciliegine or sliced)
  • 1 cup fresh basil leaves
  • 4 cups baby arugula
  • 1/4 cup extra-virgin olive oil
  • 3 Tbsp balsamic glaze
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup toasted sliced almonds
  • 1 cup fresh corn kernels, raw

Instructions

  1. 1Heat a grill or grill pan to medium-high, about 400°F. Halve and pit the peaches, then brush the cut sides lightly with a little of the olive oil.
  2. 2Grill the peach halves cut-side down without moving them until deep grill marks appear and the fruit softens slightly, 3 to 4 minutes. Flip for 1 minute more, then transfer to a cutting board to cool 5 minutes.
  3. 3While peaches cool, core and cut the heirloom tomatoes into thick wedges or rustic chunks. Place them in a large bowl with salt so their juices begin to release.
  4. 4Slice the grilled peaches into thick wedges. Add them to the tomatoes along with the fresh mozzarella and raw corn kernels.
  5. 5Drizzle most of the remaining olive oil over the fruit and cheese mixture. Add cracked black pepper and gently toss so everything is glossed but not crushed.
  6. 6Arrange a bed of baby arugula on four plates or shallow bowls. Spoon the peach-tomato-mozzarella mixture over the greens, letting juices drip onto the arugula.
  7. 7Tear basil leaves over each salad. Drizzle balsamic glaze in thin ribbons across the top and scatter toasted almonds for crunch.
  8. 8Finish with a final pinch of flaky salt if desired and serve at once while the peaches are still faintly warm and the mozzarella is soft. Pack leftover components separately for next-day work lunches.
