
Greek Chicken Souvlaki Pita Pockets
Souvlaki, meaning "little skewer" in Greek, is a beloved street-food staple across Greece. These pita pockets wrap yogurt-marinated chicken thighs and cool cucumber-dill tzatziki for a bright Mediterranean lunch.

Ingredients
- 1½ lb boneless skinless chicken thighs
- 1 cup, divided plain Greek yogurt
- 3 Tbsp lemon juice
- 3 Tbsp, divided extra-virgin olive oil
- 4 cloves, minced garlic
- 2 tsp dried oregano
- 1 tsp ground cumin
- 1¼ tsp kosher salt
- 1/2 tsp black pepper
- 1/2, grated English cucumber
- 2 Tbsp chopped fresh dill
- 4, pocket-style pita breads
- 2 cups shredded romaine lettuce
- 1 cup halved cherry tomatoes
- 1/4, thinly sliced red onion
- 1/2 cup crumbled feta
Instructions
- 1Cut the chicken thighs into 1-inch pieces. In a bowl combine Greek yogurt, lemon juice, olive oil, half the garlic, oregano, cumin, salt, and pepper.
- 2Add the chicken and toss until fully coated. Marinate at least 20 minutes at room temperature or up to overnight in the refrigerator.
- 3Make the tzatziki: squeeze grated cucumber in a clean towel to remove excess liquid. Stir it into the remaining yogurt with remaining garlic, lemon juice, dill, salt, and olive oil. Chill.
- 4Thread the marinated chicken onto metal or soaked wooden skewers. Heat a grill pan or outdoor grill to medium-high (about 400°F).
- 5Grill the skewers 4–5 minutes per side, turning once, until the chicken is charred in spots and reaches 165°F internally. Rest 3 minutes, then slide meat off the skewers.
- 6Warm the pitas in a dry skillet 30–45 seconds per side or wrap in foil and heat in a 350°F oven for 5 minutes until pliable.
- 7Carefully open each pita pocket. Spread a generous spoonful of tzatziki inside, then layer shredded romaine, grilled chicken, tomatoes, red onion, and feta.
- 8Drizzle any remaining tzatziki over the filling. Serve immediately while the chicken is warm and the pita is soft.
- 9For meal prep, store chicken, tzatziki, and chopped veggies separately and assemble pitas the morning of or at lunchtime.
