Ingredients

  • 1.25 lb boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 garlic cloves
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1.25 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 cup plain Greek yogurt
  • 1 medium cucumber
  • 2 tbsp fresh dill
  • 4 cups shredded romaine lettuce
  • 1.5 cups cherry tomatoes
  • 0.5 medium red onion
  • 0.5 cup crumbled feta cheese
  • 4 whole-wheat flatbreads or pita

Instructions

  1. 1Pat the chicken dry and place it in a bowl. Add olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper; toss until every piece is coated.
  2. 2Let the chicken marinate at room temperature for 10 minutes while you prep the remaining ingredients so the flavors start to sink in.
  3. 3Heat a large skillet over medium-high heat until a drop of water sizzles. Add the marinated chicken in a single layer and cook without moving for 4–5 minutes until deeply golden.
  4. 4Flip and continue cooking 4–6 minutes more until the internal temperature reaches 165°F and the edges are caramelized. Transfer to a cutting board and rest 3 minutes.
  5. 5While the chicken rests, stir together Greek yogurt, grated cucumber (squeeze out excess liquid), chopped dill, salt, and a squeeze of lemon to make a thick tzatziki.
  6. 6Warm the flatbreads in a dry skillet 30–45 seconds per side until pliable and lightly toasted.
  7. 7Slice the rested chicken into thin strips against the grain.
  8. 8Lay each flatbread flat and spread a generous swipe of tzatziki down the center.
  9. 9Pile on shredded romaine, halved cherry tomatoes, thin red-onion slices, and the warm chicken strips.
  10. 10Finish with crumbled feta, fold the sides in, and roll tightly. Slice in half on the bias if packing for work and wrap in parchment so they stay intact until midday.
