  • 1 1/4 lb skinless salmon fillets
  • 3 Tbsp gochujang paste
  • 2 Tbsp honey
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp toasted sesame oil
  • 3 Tbsp, divided rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 1/2 cups short-grain or jasmine rice, uncooked
  • 1 large English cucumber, thinly sliced
  • 1 tsp sugar
  • 1 tsp, divided kosher salt
  • 3 scallions, thinly sliced
  • 1 Tbsp toasted sesame seeds
  • 1 large avocado, sliced
  • 1 Tbsp neutral oil (avocado or canola)
  • 4 lime wedges, for serving

Instructions

  1. 1Rinse the rice under cold water until the water runs mostly clear, then cook according to package directions (about 15–18 minutes) with salt; fluff and keep covered so it stays warm and steamy.
  2. 2While the rice cooks, stir together gochujang, honey, soy sauce, sesame oil, rice vinegar, minced garlic, and grated ginger in a small bowl until smooth; set aside half for drizzling later.
  3. 3Pat the salmon fillets very dry with paper towels and cut into 4 even portions; season lightly on both sides with kosher salt.
  4. 4Heat the neutral oil in a large nonstick skillet over medium-high heat until it shimmers. Place salmon presentation-side down and sear undisturbed for 3–4 minutes until a deep golden crust forms.
  5. 5Flip the salmon, reduce heat to medium, and brush the tops generously with half of the gochujang glaze. Continue cooking 3–5 minutes more, basting once, until the fish flakes easily and reaches 125–130°F in the center for medium; the glaze should look sticky and lacquered.
  6. 6Meanwhile, toss the thinly sliced cucumber with the remaining rice vinegar, sugar, and salt in a bowl; massage gently for 30 seconds and let sit at least 5 minutes so the pickles turn bright and lightly wilted.
  7. 7Divide the hot rice among four bowls. Flake or nestle a glazed salmon portion over each mound of rice, then spoon any pan juices and reserved glaze over the top.
  8. 8Pile a generous handful of the quick cucumber pickle beside the fish, add avocado slices, and finish with sliced scallions and a shower of toasted sesame seeds.
