Ingredients

  • 14 oz block extra-firm tofu, pressed
  • ¼ cup soy sauce or tamari
  • 2 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1½ tbsp honey or maple syrup
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 2 tbsp cornstarch
  • 2 tbsp neutral oil
  • 3 cups cooked jasmine or brown rice
  • 1 English cucumber, thinly sliced
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup edamame, shelled and thawed
  • 4 green onions, sliced
  • 2 tbsp toasted sesame seeds
  • to taste sriracha or chili crisp (optional)

Instructions

  1. 1Press the tofu for at least 15 minutes between towels under a heavy pan to remove excess moisture, then pat dry and cut into ¾-inch cubes. Place cubes in a medium bowl.
  2. 2In a small jar or bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic until the honey dissolves. Pour half of this marinade over the tofu cubes and toss gently to coat; marinate 10 minutes while you prep vegetables.
  3. 3Sprinkle the cornstarch over the marinated tofu and toss until every cube looks lightly dusty and the marinade is absorbed into a sticky coating.
  4. 4Heat the neutral oil in a large nonstick skillet over medium-high heat. Add the tofu in a single layer and cook undisturbed 3–4 minutes until the bottoms are deep golden and crisp. Flip and continue cooking 6–8 minutes total, turning occasionally, until most sides are browned and crunchy.
  5. 5Pour the remaining marinade into the hot skillet with the tofu. It will bubble vigorously—toss 30–60 seconds until the sauce thickens into a glossy glaze that clings to each cube. Remove from heat.
  6. 6Warm the cooked rice if needed and divide it among 4 bowls. Arrange piles of cucumber, red cabbage, shredded carrots, and edamame the rice for color and crunch.
  7. 7Spoon the hot glazed tofu into the center of each bowl. Scatter sliced green onions and toasted sesame seeds generously over everything.
  8. 8Drizzle any leftover pan glaze from the skillet over the bowls, and finish with sriracha or chili crisp if you want heat. Serve immediately while the tofu is still crispy.
  9. 9For meal prep, store rice, raw veggies, and tofu in separate containers; reheat tofu in a skillet or air fryer 4–5 minutes at 375°F so it re-crisps, then assemble fresh.
