Ingredients
- 15 sheets rice paper wrappers
- 1 1/2 cups napa cabbage kimchi, drained and chopped
- 8 oz firm tofu, crumbled
- 4 green onions, finely sliced
- 3 garlic cloves, minced
- 1 tbsp toasted sesame oil
- 2 tbsp soy sauce
- 1 tsp gochugaru
- 3 tbsp neutral oil for pan-frying
- 2 tbsp rice vinegar
- 1 tsp honey
- 1 tbsp toasted sesame seeds
- 1 cup cucumber sticks
Instructions
- 1Pat the drained kimchi dry with paper towels, then finely chop it so the filling stays compact and does not tear the wrappers.
- 2In a skillet over medium heat, warm a drizzle of sesame oil and sauté the minced garlic until fragrant, about 30 seconds.
- 3Add the crumbled tofu and chopped kimchi; cook 4 to 5 minutes, stirring, until excess moisture evaporates and the mixture looks cohesive.
- 4Season the filling with soy sauce and gochugaru, then fold in most of the green onions; transfer to a plate and cool 5 minutes so it will not soften the rice paper.
- 5Fill a shallow plate with warm water. Dip one rice paper wrapper for 5 to 8 seconds until pliable but still slightly firm, then lay it on a damp cutting board.
- 6Place a heaping tablespoon of filling in the center, fold the sides inward, and roll into a tight rectangle or bundle; repeat until all filling is used.
- 7Heat neutral oil in a large nonstick skillet over medium-high heat until shimmering. Arrange dumplings in a single layer without crowding.
- 8Pan-fry 2 to 3 minutes per side, pressing gently with a spatula, until the rice paper turns blistered, golden, and shatter-crisp.
