Ingredients

  • 14 oz extra-firm tofu, pressed
  • 1/3 cup cornstarch
  • 3 tbsp neutral oil for pan-frying
  • 3 tbsp soy sauce or tamari
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp sesame oil
  • 8 rice paper wrappers
  • 8 butter lettuce leaves
  • 1 large carrot, julienned
  • 1 English cucumber, matchsticks
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro sprigs
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. 1Press tofu between paper towels under a heavy skillet for 10 minutes to remove excess moisture, then cut into 1/2-inch cubes. Toss cubes gently in cornstarch until evenly coated on all sides.
  2. 2Heat neutral oil in a large nonstick skillet over medium-high heat. Add tofu in a single layer and cook 3–4 minutes per side, turning carefully, until all sides are deep golden and crisp, about 12 minutes total. Transfer to a plate.
  3. 3In the same skillet over medium heat, add remaining oil if dry. Stir in minced garlic and grated ginger and cook 30 seconds until fragrant but not browned.
  4. 4Whisk soy sauce, honey, rice vinegar, and sesame oil in a small bowl, then pour into the skillet. Simmer 1–2 minutes until slightly thickened and glossy. Return crispy tofu and toss to coat evenly; remove from heat.
  5. 5Fill a large shallow dish with warm water. Dip one rice paper wrapper for 8–10 seconds until pliable but still slightly firm—it will soften more as you work. Lay flat on a clean cutting board.
  6. 6Place a butter lettuce leaf in the center, then add a few pieces of honey-garlic tofu, a small handful of carrot and cucumber matchsticks, mint, cilantro, and a sprinkle of chopped peanuts.
  7. 7Fold the bottom edge up over the filling, fold in the sides, and roll tightly away from you like a burrito. Repeat with remaining wrappers and filling.
  8. 8Serve wraps immediately with any leftover sauce for dipping, or wrap individually in parchment for a portable lunch that stays fresh a few hours.
