TrendingLunchMediterraneanBowlVegetarianMeal prep
Ingredients
- 1 cup dry farro
- 1 (15 oz) can, drained and rinsed canned chickpeas
- 3 tbsp extra-virgin olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp, divided kosher salt
- 1 medium, diced English cucumber
- 1 1/2 cups, halved cherry tomatoes
- 1 cup diced English cucumber
- 1/4 cup finely diced red onion
- 1/3 cup pitted and halved Kalamata olives
- 4 oz crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 3 tbsp lemon juice
- 1 clove, minced garlic
- 1/2 tsp dried oregano
- 2 cups baby spinach
Instructions
- 1Rinse the farro under cold water, then combine it with water and salt in a medium saucepan. Bring to a boil over high heat, reduce to a steady simmer, cover, and cook 25–30 minutes until the grains are tender with a pleasant chew; drain any excess liquid and fluff with a fork.
- 2While the farro cooks, pat the drained chickpeas very dry with paper towels. Toss them on a rimmed baking sheet with olive oil, smoked paprika, cumin, and salt until evenly coated.
- 3Roast the chickpeas at 425°F on the middle rack for 20–25 minutes, shaking the pan halfway, until deeply golden and crisp on the outside. Let them cool 5 minutes so they stay crunchy.
- 4In a small bowl, whisk together the remaining olive oil, lemon juice, minced garlic, oregano, and remaining salt until emulsified; taste and adjust brightness with an extra squeeze of lemon if needed.
- 5Dice the cucumber and red onion, halve the cherry tomatoes, and roughly chop the parsley and olives so everything is bite-size and ready to assemble.
- 6Divide the warm farro among 4 bowls and nestle a small handful of baby spinach into each so the residual heat just wilts the leaves.
- 7Top each bowl with equal portions of cucumber, tomatoes, red onion, olives, and the crispy chickpeas.
- 8Drizzle the lemon-oregano dressing generously over each bowl, then finish with crumbled feta and a sprinkle of parsley. Serve immediately, or pack components separately for meal-prep lunches that stay fresh up to 4 days.
