Ingredients

  • 1 cup dry farro
  • 1 (15 oz) can, drained and rinsed canned chickpeas
  • 3 tbsp extra-virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp, divided kosher salt
  • 1 medium, diced English cucumber
  • 1 1/2 cups, halved cherry tomatoes
  • 1 cup diced English cucumber
  • 1/4 cup finely diced red onion
  • 1/3 cup pitted and halved Kalamata olives
  • 4 oz crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 3 tbsp lemon juice
  • 1 clove, minced garlic
  • 1/2 tsp dried oregano
  • 2 cups baby spinach

Instructions

  1. 1Rinse the farro under cold water, then combine it with water and salt in a medium saucepan. Bring to a boil over high heat, reduce to a steady simmer, cover, and cook 25–30 minutes until the grains are tender with a pleasant chew; drain any excess liquid and fluff with a fork.
  2. 2While the farro cooks, pat the drained chickpeas very dry with paper towels. Toss them on a rimmed baking sheet with olive oil, smoked paprika, cumin, and salt until evenly coated.
  3. 3Roast the chickpeas at 425°F on the middle rack for 20–25 minutes, shaking the pan halfway, until deeply golden and crisp on the outside. Let them cool 5 minutes so they stay crunchy.
  4. 4In a small bowl, whisk together the remaining olive oil, lemon juice, minced garlic, oregano, and remaining salt until emulsified; taste and adjust brightness with an extra squeeze of lemon if needed.
  5. 5Dice the cucumber and red onion, halve the cherry tomatoes, and roughly chop the parsley and olives so everything is bite-size and ready to assemble.
  6. 6Divide the warm farro among 4 bowls and nestle a small handful of baby spinach into each so the residual heat just wilts the leaves.
  7. 7Top each bowl with equal portions of cucumber, tomatoes, red onion, olives, and the crispy chickpeas.
  8. 8Drizzle the lemon-oregano dressing generously over each bowl, then finish with crumbled feta and a sprinkle of parsley. Serve immediately, or pack components separately for meal-prep lunches that stay fresh up to 4 days.
