Ingredients

  • 2 (15-oz) cans canned chickpeas
  • 3 Tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 whole-wheat or white pita breads
  • 3/4 cup crumbled feta
  • 1/2 grated English cucumber
  • 3/4 cup plain Greek yogurt
  • 2 Tbsp chopped fresh dill
  • 1 Tbsp lemon juice
  • 1 grated garlic clove
  • 2 cups baby spinach
  • 1 cup halved cherry tomatoes

Instructions

  1. 1Drain and rinse the chickpeas thoroughly, then pat them very dry with a clean kitchen towel—this is key for crispiness. Spread on a baking sheet.
  2. 2Preheat oven to 425°F (or air fryer to 400°F). Toss chickpeas with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated.
  3. 3Roast on the middle rack 20–25 minutes, shaking the pan halfway, until deep golden and crunchy on the outside. Air-fryer option: cook 12–15 minutes shaking twice.
  4. 4While chickpeas roast, grate the cucumber on the large holes of a box grater. Squeeze handfuls firmly over the sink to remove as much liquid as possible.
  5. 5In a small bowl stir together Greek yogurt, squeezed cucumber, dill, lemon juice, grated garlic, and salt to make a thick tzatziki-style sauce.
  6. 6Warm the pitas in a 300°F oven for 3–4 minutes or microwave 15 seconds so they become soft and easy to open without tearing.
  7. 7Carefully split each pita to form a pocket. Spread 2–cucumber yogurt inside, then stuff with baby spinach and a few tomato halves.
  8. 8Spoon a generous portion of hot crispy chickpeas into each pocket and top with crumbled feta. Drizzle any remaining olive oil if desired.
