Ingredients

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 large flour tortillas
  • 4 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing
  • 1 cup croutons
  • 1 lemon

Instructions

  1. 1Pat the chicken dry with paper towels and place on a cutting board. Slice each breast horizontally into thinner cutlets so they cook evenly and stay juicy.
  2. 2Season both sides of the chicken with garlic powder, paprika, salt, and black pepper, pressing the spices in so they adhere.
  3. 3Heat a large skillet over medium-high heat and add the olive oil. When the oil shimmers, lay the chicken in a single layer without crowding.
  4. 4Cook the chicken 4 to 5 minutes per side until deeply golden and the internal temperature reaches 165°F. Transfer to a plate and rest 5 minutes.
  5. 5While the chicken rests, warm the tortillas one at a time in a dry skillet over medium heat for about 20 seconds per side until pliable. Stack them under a clean towel.
  6. 6Chop the rested chicken into bite-size strips. In a large bowl, toss the chopped romaine with most of the Caesar dressing until every leaf is lightly coated.
  7. 7Lay a warm tortilla flat. Down the center, pile dressed romaine, chicken strips, Parmesan, and croutons. Squeeze a little lemon over the filling.
  8. 8Drizzle any remaining dressing over the top. Fold in the sides of the tortilla, then roll tightly from the bottom up like a burrito.
  9. 9Slice each wrap in half on a slight diagonal if packing for work, or serve whole. The wrap should feel sturdy and the chicken still warm against the cool crisp lettuce.
