  • 28 oz crushed tomatoes (canned)
  • 3 cups vegetable broth

  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 20 oz refrigerated cheese tortellini
  • 3/4 cup heavy cream
  • 1/2 cup fresh basil leaves, torn
  • 1/3 cup grated Parmesan cheese
  • 2 cups baby spinach

Instructions

  1. 1Heat olive oil in a large Dutch oven or heavy pot over medium heat. Add diced onion and cook 5–6 minutes, stirring occasionally, until translucent and soft.
  2. 2Stir in minced garlic and tomato paste; cook 1 minute until the paste darkens slightly and smells fragrant.
  3. 3Pour in crushed tomatoes and vegetable broth, then add Italian seasoning, red pepper flakes, salt, and black pepper. Bring to a gentle boil.
  4. 4Reduce heat to medium-low and simmer uncovered 12 minutes so the flavors meld and the soup thickens slightly.
