Ingredients

  • 1 (15 oz) can canned chickpeas, drained and rinsed
  • 1 large English cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 1/2 small red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. 1Drain and rinse the chickpeas thoroughly under cold water, then pat them dry with a clean kitchen towel so the dressing clings better later.
  2. 2Dice the English cucumber into 1/2-inch pieces, halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion; place all the vegetables in a large mixing bowl.
  3. 3Add the drained chickpeas, halved Kalamata olives, chopped parsley, and chopped dill to the bowl with the vegetables.
  4. 4In a small jar or bowl, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, kosher salt, and black pepper until the dressing is emulsified and fragrant.
  5. 5Pour the dressing over the chopped salad mixture and toss gently but thoroughly with tongs or two large spoons so every piece is lightly coated.
  6. 6Crumble the feta cheese over the top and fold it in gently so some larger crumbles remain visible for texture and visual appeal.
  7. 7Taste and adjust seasoning with an extra pinch of salt or squeeze of lemon if needed; the salad should taste bright, briny, and herbaceous.
  8. 8Let the salad rest at room temperature for 10 minutes so the flavors meld, or chill for up to 30 minutes if packing for lunch.
  9. 9Divide evenly among four bowls or meal-prep containers, aiming for per serving, and serve immediately or refrigerate for up to 3 days.
  10. 10If packing ahead, keep a little extra lemon wedge on the side to refresh the salad just before eating at midday.
