Chicken Shawarma Sheet-Pan Bowl

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1.5 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 large red onion
  • 2 bell peppers mixed colors
  • 3 cups cooked basmati rice
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 1 cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh parsley chopped
  • 1 garlic clove minced

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment paper for easy cleanup.
  2. 2Pat the chicken thighs dry, then place them in a large bowl and drizzle with most of the olive oil.
  3. 3Add the cumin, smoked paprika, coriander, garlic powder, turmeric, cayenne, salt, and black pepper; toss until every piece is evenly coated and fragrant.
  4. 4Slice the red onion into thick wedges and cut the bell peppers into wide strips; scatter them the edges of the sheet pan and drizzle lightly with the remaining oil.
  5. 5Nestle the spiced chicken thighs in a single layer in the center of the pan so they roast without crowding.
  6. 6Roast for 22 to 26 minutes until the chicken reaches 165°F internally, the edges are caramelized, and the vegetables are tender with charred tips.
  7. 7While the pan roasts, stir the Greek yogurt with lemon juice, minced garlic, and salt to make a quick tahini-style sauce base; keep it cold.
  8. 8Dice the cucumber and halve the cherry tomatoes; warm the cooked basmati rice if needed.
  9. 9Transfer the roasted chicken to a cutting board and rest 3 minutes, then slice into bite-size strips against the grain.
  10. 10Build each bowl with a scoop of rice, roasted peppers and onion, sliced shawarma chicken, fresh cucumber and tomatoes.
  11. 11Drizzle generously with the yogurt sauce and finish with chopped parsley.
  12. 12Serve warm for lunch or pack into meal-prep containers with sauce on the side so everything stays crisp until midday.
