Cheddar Bay Chicken Cobbler Bowls
Cheddar Bay nods to the garlicky cheddar biscuits made famous at American seafood chains. This spoonable cobbler bowls the saucy chicken-and-veg filling under a golden biscuit lid brushed with butter, sharp cheddar, and a hint of Old Bay.

Ingredients
- 3 cups rotisserie chicken, shredded
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp Old Bay seasoning
- 1 can (16 oz, 8 biscuits) refrigerated biscuit dough
- 1½ cups sharp cheddar cheese, shredded
- 3 tbsp unsalted butter, melted
- 1 tsp dried parsley
- ½ tsp garlic powder (for biscuit tops)
- ¾ tsp kosher salt
- ½ tsp black pepper
Instructions
- 1Preheat the oven to 375°F and grease a 9×13-inch casserole dish or deep oven-safe skillet.
- 2In a large bowl stir together the shredded rotisserie chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, Old Bay, salt, and pepper until creamy and evenly coated.
- 3Spread the chicken mixture into an even layer in the prepared dish; it should look loose and saucy so it stays spoonable for lunch bowls.
- 4Separate the biscuit dough into individual rounds and arrange them snugly over the filling, leaving small gaps for steam.
- 5Sprinkle the shredded cheddar evenly over the biscuits and any exposed filling.
- 6Bake uncovered for 25 to 30 minutes until the biscuits are deep golden, the cheese is bubbling, and the filling is hot at the center.
- 7Meanwhile stir the melted butter with dried parsley and the extra garlic powder.
- 8Brush the hot biscuit tops generously with the garlic-parsley butter as soon as the pan leaves the oven so they soak up the flavor.
- 9Rest the cobbler 8 to 10 minutes so the sauce thickens enough to scoop cleanly into bowls without running.
- 10For lunch service, place one biscuit in each bowl and ladle chicken filling beside or over it; pack leftovers in separate containers so biscuits stay crisp when reheated.
