Ingredients

  • 3 cups (about 1 lb) cooked shredded chicken
  • 1/3 cup buffalo wing sauce
  • 1/3 cup, plus more for drizzling ranch dressing
  • 3 celery stalks
  • 1 cup shredded carrots
  • 2 cups thinly sliced green cabbage
  • 1/3 cup (optional) blue cheese crumbles
  • 4 large flour tortillas (10-inch)
  • 8 leaves romaine lettuce leaves
  • 2 sliced scallions
  • 1 Tbsp lime juice
  • 1/4 tsp kosher salt

Instructions

  1. 1In a medium bowl, toss the shredded chicken with buffalo sauce and ranch until every strand is coated and glossy. Taste and add more hot sauce if you like extra heat.
  2. 2Thinly slice the celery on a bias. In another bowl, combine celery, shredded carrots, cabbage, remaining ranch, lime juice, and salt. Toss until the slaw is lightly dressed and crunchy.
  3. 3Warm the tortillas one at a time in a dry skillet over medium heat for 20–30 seconds per side until pliable, or wrap the stack in a damp paper towel and microwave 30 seconds.
  4. 4Lay each tortilla flat. Place two romaine leaves down the center to create a moisture barrier. Spoon three-quarters cup of buffalo chicken in a horizontal line across the middle.
  5. 5Top the chicken with a generous handful of the celery slaw, a sprinkle of blue cheese if using, and sliced scallions. Drizzle a little extra ranch if desired.
  6. 6Fold the bottom edge of the tortilla up over the filling, then fold in both sides and roll tightly away from you to form a secure burrito-style wrap.
  7. 7If packing for later, wrap each tightly in parchment or foil and refrigerate up to 2 days. For extra crispness, toast the finished wrap in a skillet over medium heat 2 minutes per side until golden.
