Ingredients

  • 1 1/4 lb ground turkey (93% lean)
  • 12 large butter lettuce leaves
  • 2 tbsp taco seasoning
  • 1 can (10 oz), drained diced tomatoes with green chiles
  • 1 small yellow onion
  • 3 fresh garlic cloves
  • 1 lime
  • 1 avocado
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup plain nonfat Greek yogurt
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1Rinse and thoroughly dry the butter lettuce leaves; keep them whole and chilled so they stay crisp cups. Dice the onion finely and mince the garlic.
  2. 2Heat a large nonstick skillet over medium-high heat and add the olive oil. Add the onion and cook 3 to 4 minutes until softened and translucent.
  3. 3Add the garlic and stir for 30 seconds until fragrant. Crumble in the ground turkey and season with salt and black pepper.
  4. 4Cook the turkey 6 to 8 minutes, breaking it into small pieces, until no pink remains and it starts to brown lightly.
  5. 5Sprinkle the taco seasoning over the meat and stir to coat evenly. Pour in the drained diced tomatoes with green chiles and water.
  6. 6Simmer uncovered 3 to 4 minutes until the liquid reduces and the mixture looks saucy but not watery. Squeeze in half the lime juice and taste for seasoning.
  7. 7While the filling finishes, mash the avocado with salt and the remaining lime juice for a quick guac-style topping. Stir the Greek yogurt until smooth for a light crema.
  8. 8Arrange three sturdy lettuce leaves on each plate as open cups. Spoon the hot turkey taco filling into the center of each leaf.
  9. 9Top each wrap with a spoonful of mashed avocado, a dollop of Greek yogurt, and a sprinkle of chopped cilantro. Serve immediately so the lettuce stays crunchy.
