Ingredients

  • 1 lb lean ground beef (90/10)
  • 4 cups cooked jasmine or white rice (warm)
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp packed light brown sugar
  • 2 tbsp gochujang paste
  • 1 tbsp toasted sesame oil
  • 4 cloves, minced fresh garlic
  • 1 tbsp, minced fresh ginger
  • 1 tbsp neutral oil (avocado or vegetable)
  • 1 large English cucumber
  • 2 tbsp rice vinegar
  • 5, thinly sliced green onions
  • 1 tbsp toasted sesame seeds
  • 1/2 tsp kosher salt
  • 4 optional soft-fried eggs

Instructions

  1. 1If your rice is not already cooked, start it first so you have 4 warm cups ready; keep covered off heat. While rice cooks, thinly slice the cucumber into half-moons and toss in a medium bowl with the rice vinegar, salt, and half of the sliced green onions; set aside to quick-pickle and crisp up.
  2. 2In a small bowl whisk together the soy sauce, brown sugar, gochujang, and sesame oil until the sugar mostly dissolves and the sauce looks glossy and uniform; set near the stove. Mince the garlic and ginger so they are ready to go.
  3. 3Heat the neutral oil in a large 12-inch skillet over medium-high heat until it shimmers, about 1 minute. Add the ground beef in an even layer and let it sear undisturbed for 2 minutes to develop browned bits, then break it up with a wooden spoon.
  4. 4Continue cooking the beef, stirring occasionally, until no pink remains and the edges are deeply browned, 5 to 7 minutes total. If excess fat pools, carefully tilt the pan and spoon most of it off, leaving for flavor.
  5. 5Push the beef to the sides, add the minced garlic and ginger to the center, and cook 45–60 seconds until fragrant and just golden, stirring constantly so nothing burns. Stir everything together so the aromatics coat the meat.
  6. 6Pour the prepared gochujang-soy sauce over the beef. Reduce heat to medium and simmer, stirring frequently, until the sauce thickens, turns shiny, and clings to every crumble, 2 to 3 minutes. Taste and add a pinch more salt or gochujang if you want extra heat.
  7. 7Remove the skillet from heat. Fluff the warm rice and divide it evenly among four bowls. Spoon the hot sweet-spicy beef generously over each mound of rice.
  8. 8Top each bowl with a big spoonful of the quick-pickled cucumber (and its juices), the remaining green onions, and a sprinkle of toasted sesame seeds. For extra richness, slide a soft-fried egg on top if using. Serve immediately while the beef is still glossy and the cucumber is cool and crunchy.
