Ingredients

  • 1.5 lb large raw shrimp peeled and deveined
  • 1.5 tsp ground sumac
  • 1.5 tsp Aleppo pepper or mild chili flakes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 cloves garlic
  • 1/2 cup fresh parsley
  • 1/4 cup fresh mint
  • 2 lemon
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 head romaine lettuce
  • 1 large cucumber
  • 1.5 cups cherry tomatoes
  • 1/2 red onion
  • 8 wooden or metal skewers

Instructions

  1. 1If using wooden skewers, soak them in water for 20 minutes so they do not burn. Pat the shrimp completely dry with paper towels and place them in a large bowl.
  2. 2Mince the garlic and finely chop the parsley and mint. Add the garlic, most of the herbs, sumac, Aleppo pepper, cumin, smoked paprika, salt, black pepper, the zest and juice of one lemon, and two tablespoons of olive oil to the shrimp.
  3. 3Toss thoroughly so every shrimp is coated in the bright red spice mixture. Let the shrimp marinate at room temperature for 10 to 15 minutes while you prep the salad and heat the grill or broiler.
  4. 4Thread the shrimp onto the skewers, packing them snugly but not overlapping so they cook evenly. Aim for 5 to shrimp per skewer.
  5. 5Preheat a grill pan, outdoor grill, or broiler to high heat. Brush the grates or pan lightly with the remaining olive oil.
  6. 6Grill or broil the kebabs for 2 to 3 minutes per side until the shrimp turn opaque, curl tightly, and develop light char marks and caramelized spice edges. Do not overcook or they will toughen.
  7. 7While the shrimp cook, chop the romaine into bite-size pieces, slice the cucumber into half-moons, halve the cherry tomatoes, and thinly slice the red onion. Toss the vegetables with a squeeze of the second lemon and salt.
  8. 8Arrange the salad on a large platter or four plates. Lay the hot kebabs across the top and scatter the remaining chopped herbs over everything.
  9. 9Serve immediately with extra lemon wedges for squeezing. The shrimp should be juicy, smoky, and boldly spiced in true Adana fashion while staying fully keto-friendly.
