Ingredients
- 8 (about 3 lb) bone-in skin-on chicken thighs
- 2 large (about 1 1/2 lb), cut into 1-inc sweet potatoes
- 1 lb, halved Brussels sprouts
- 3 tbsp olive oil
- 3 tbsp pure maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 1/2 tsp kosher salt
- 3/4 tsp black pepper
- 2 sprigs fresh rosemary
Instructions
- 1Preheat oven to 425°F. Line a large rimmed sheet pan with parchment for easier cleanup.
- 2Pat chicken thighs very dry with paper towels. In a small bowl whisk together maple syrup, Dijon, vinegar, garlic powder, smoked paprika, thyme, salt, and pepper.
- 3Toss sweet potato cubes and halved Brussels sprouts on the sheet pan with olive oil, remaining salt, and pepper. Spread into an even layer, leaving space for the chicken.
- 4Nestle chicken thighs skin-side up among the vegetables. Brush or spoon the maple-Dijon mixture generously over the skin and tops of each thigh. Drizzle any remaining mixture over the vegetables. Drizzle chicken with the last tablespoon of oil and tuck rosemary sprigs onto the pan.
- 5Roast for 35–40 minutes until chicken skin is deep golden and crispy, internal temperature reaches 175°F in the thickest part, and sweet potatoes are tender when pierced.
- 6If the skin needs more color, switch the oven to broil for the final 2–3 minutes, watching closely so the maple glaze doesn’t burn.
- 7Rest the chicken 5 minutes on the pan. Toss vegetables in the pan juices.
- 8Plate two thighs per person with a generous scoop of roasted sweet potatoes and Brussels sprouts, spooning extra pan juices over the top.
