
Sheet-Pan Italian Sausage with Peppers, Onions & Crispy Gnocchi

Ingredients
- 1 1/4 lb Italian sausage links (mild or hot)
- 16 oz shelf-stable potato gnocchi
- 3 large bell peppers (mixed colors), sliced
- 1 large red onion, thick wedges
- 5 garlic cloves, smashed
- 3 tbsp olive oil
- 1 1/2 tsp dried Italian seasoning
- 1/2 tsp fennel seeds
- 1 tsp kosher salt
- 3/4 tsp black pepper
- 1/3 cup grated Parmesan
- 1/4 cup fresh parsley, chopped
- 2 tbsp balsamic glaze
Instructions
- 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easier cleanup.
- 2Slice the sausage links into 1-inch coins on a slight bias. Toss the uncooked gnocchi, sliced peppers, onion wedges, and smashed garlic on the sheet pan.
- 3Drizzle everything with the olive oil, then sprinkle with Italian seasoning, fennel seeds, salt, and black pepper. Toss thoroughly with your hands so every piece is coated and the gnocchi is separated.
- 4Nestle the sausage coins evenly among the vegetables and gnocchi, making sure nothing is piled too high so everything crisps.
- 5Roast for 20 minutes. Remove the pan, flip the sausage pieces and stir the gnocchi and peppers so the undersides can brown.
- 6Return to the oven for another 12–15 minutes until the sausage is browned and cooked through (160°F internal), the peppers are charred at the edges, and the gnocchi are golden and crispy outside.
- 7Sprinkle the hot pan with grated Parmesan and return to the oven for 2 final minutes so the cheese melts and crisps slightly.
- 8Remove from the oven, drizzle with balsamic glaze, and scatter chopped parsley over the top.
- 9Serve straight from the sheet pan family-style, making sure each plate gets a mix of crispy gnocchi, juicy sausage, and caramelized peppers and onions.
