Ingredients

  • 2.5 lb bone-in skin-on chicken thighs
  • 2 cups fresh corn kernels
  • 1.5 cups lima beans, frozen thawed
  • 2 cups cherry tomatoes, halved
  • 1.5 cups bell peppers, chopped
  • 1 medium red onion, sliced
  • 1/3 cup fresh basil leaves
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1.5 tsp smoked paprika
  • 1 tsp dried thyme
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh lemon juice
  • 2 tbsp unsalted butter

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easy cleanup.
  2. 2Pat the chicken thighs very dry, then rub all over with olive oil, smoked paprika, thyme, salt, and black pepper so the skin seasons evenly.
  3. 3Arrange the chicken skin-side up on one side of the sheet pan, leaving space so the skin can crisp rather than steam.
  4. 4Toss the corn, lima beans, bell peppers, red onion, and garlic with the remaining olive oil, salt, and black pepper on the other side of the pan.
  5. 5Roast for 25 minutes until the chicken skin is beginning to brown and the vegetables start to soften and caramelize at the edges.
  6. 6Scatter the cherry tomatoes the vegetables, nestling them into the mix, and return the pan to the oven for another 12 to 15 minutes until the chicken reaches 175°F at the thickest part and the skin is deep golden and crisp.
  7. 7Transfer the chicken to a platter to rest a few minutes; meanwhile, fold the butter, lemon juice, and torn basil into the hot succotash on the pan so everything glistens.
  8. 8Taste the succotash and adjust seasoning if needed, then spoon it generously the chicken on a large shareable platter.
  9. 9Drizzle any pan juices over the top and finish with a few extra basil leaves for color.
