  • 1 whole (about 2 lb meat) store-bought rotisserie chicken
  • 1 can (15 oz) canned cannellini beans, drained and rinsed
  • 2 cups fresh sweet corn kernels
  • 3 medium heirloom tomatoes, wedged and sliced
  • 1 English cucumber, sliced
  • 8 oz fresh mozzarella balls (ciliegine)
  • 1 cup fresh basil leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp chili crisp
  • 8 pieces crusty bread or focaccia, sliced
  • 4 lemon wedges

Instructions

  1. 1Remove the meat from the rotisserie chicken, discarding skin if preferred, and shred or slice into bite-size pieces. Arrange the chicken in a generous pile on a large serving board or platter.
  2. 2In a medium bowl, whisk together the olive oil, red wine vinegar, Dijon, honey, salt, and pepper until emulsified into a bright vinaigrette.
  3. 3Toss the drained white beans with two tablespoons of the vinaigrette and a spoonful of chili crisp. Spoon the dressed beans onto the board next to the chicken.
  4. 4Scatter the fresh corn kernels (raw or quickly blanched if preferred ultra-tender) in a loose pile. Arrange the heirloom tomato wedges and cucumber slices in colorful rows.
  5. 5Nestle the mozzarella balls among the vegetables. Tuck whole basil leaves throughout for color and aroma.
  6. 6Drizzle the remaining vinaigrette lightly over the tomatoes, corn, and mozzarella. Add an extra small spoon of chili crisp over the chicken for heat and crunch.
