One-Pan Garlic Butter Steak Bites with Crispy Potatoes

Ingredients

  • 1.5 lb sirloin steak
  • 1.5 lb baby potatoes
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • 6 garlic cloves
  • 1/4 cup fresh parsley
  • 1 tsp smoked paprika
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. 1Pat the steak dry with paper towels and cut it into 1-inch cubes; season generously on all sides with salt, black pepper, and smoked paprika.
  2. 2Halve the baby potatoes and toss them in a large bowl with half the olive oil, salt, and black pepper until evenly coated.
  3. 3Heat a large 12-inch cast-iron or heavy skillet over medium-high heat and add the remaining olive oil.
  4. 4Add the potatoes cut-side down in a single layer and cook undisturbed for 6–8 minutes until deeply golden and crisp on the bottom.
  5. 5Stir the potatoes, reduce heat to medium, and continue cooking another 8–10 minutes until fork-tender; transfer them to a plate and tent loosely with foil.
  6. 6Return the same skillet to high heat; when shimmering, add the steak cubes in a single layer without crowding and sear 2 minutes per side until a deep brown crust forms and the centers reach medium-rare.
  7. 7Reduce heat to medium-low, push steak to one side, and add the butter; once melted, add the minced garlic and red pepper flakes and cook 30–45 seconds until fragrant.
  8. 8Toss the steak in the garlic butter, then return the potatoes to the skillet and fold everything together so the potatoes soak up the sauce.
  9. 9Remove from heat, scatter the chopped parsley over the top, taste and adjust seasoning, and serve immediately straight from the pan.
