Ingredients
- 2 lb lean ground turkey (93% lean)
- 1 large egg
- ½ cup grated Parmesan cheese
- ⅓ cup almond flour or plain breadcrumbs
- 1½ tsp garlic powder
- 2 tsp dried Italian seasoning
- 1½ tsp kosher salt
- ¾ tsp black pepper
- 3 cups marinara sauce (no-sugar-added preferred)
- 1½ cups shredded part-skim mozzarella
- ¼ cup fresh basil or parsley, chopped
- as needed olive oil spray
- optional pinch red pepper flakes
Instructions
- 1Preheat the oven to 400°F. Lightly coat a 9×13-inch baking dish with olive oil spray. In a large bowl combine the ground turkey, egg, grated Parmesan, almond flour (or breadcrumbs), garlic powder, Italian seasoning, salt, and black pepper.
- 2Mix gently with clean hands just until the ingredients come together; do not overwork or the meatballs will be dense. Portion the mixture into 24 equal meatballs, about 1½ inches each, rolling them lightly between your palms.
- 3Arrange the meatballs in a single layer in the prepared baking dish so they are close but not tightly packed. Bake uncovered for 15 minutes until the exteriors are lightly set and beginning to brown.
- 4Remove the dish from the oven. Carefully pour the marinara sauce evenly over and the meatballs so they are mostly submerged. Sprinkle the shredded mozzarella generously over the top.
- 5Return the dish to the oven and bake until the cheese is melted and bubbly with golden spots and the meatballs reach 165°F in the center, 18 to 22 minutes more.
- 6If you want extra browning, switch the oven to broil for the final 1 to 2 minutes, watching closely so the cheese does not burn.
- 7Remove from the oven and let the bake rest 5 minutes so the juices redistribute and the sauce thickens slightly. Scatter chopped fresh basil or parsley and red pepper flakes if using.
- 8Scoop portions into bowls or meal-prep containers. The bake reheats beautifully and delivers consistent high protein for muscle-building weeknight dinners.
