  • 1 1/4 lb lean ground beef (93% lean)
  • 2 (about 1 1/2 lb total) medium sweet potatoes
  • 2 cups low-fat cottage cheese
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 green onions

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment. Scrub the sweet potatoes, pierce a few times, and cut into 3/4-inch cubes so they roast evenly.
  2. 2Toss the sweet potato cubes with half the olive oil, half the salt, garlic powder, and smoked paprika. Spread in a single layer on one side of the sheet pan.
  3. 3On the other side of the pan, toss the broccoli florets with the remaining oil and salt. Roast everything for 22 to 25 minutes, flipping halfway, until the sweet potatoes are caramelized at the edges and the broccoli is tender-crisp with charred tips.
  4. 4While the vegetables roast, heat a large 12-inch skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon.
  5. 5Season the beef with the remaining salt, black pepper, onion powder, and any leftover paprika. Cook 6 to 8 minutes until fully browned and no pink remains, stirring occasionally so it stays crumbly rather than clumpy. Drain excess fat if needed.
  6. 6Warm the cottage cheese slightly in the microwave for 20 to 30 seconds or leave it cold for contrast; either way it adds a creamy high-protein boost when spooned over the hot components.
