
Mediterranean Lamb Meatballs Sheet-Pan
Across the eastern Mediterranean, lamb meatballs brightened with mint, parsley, and warm spices have long been a weeknight favorite. This sheet-pan take roasts them with zucchini and cherry tomatoes until everything is juicy and fragrant.

Ingredients
- 1.25 lb ground lamb
- 0.3 cup panko breadcrumbs
- 1 large egg
- 4 garlic cloves
- 0.5 cup fresh parsley
- 0.25 cup fresh mint
- 1.5 tsp ground cumin
- 1 tsp ground coriander
- 1.25 tsp kosher salt
- 0.5 tsp black pepper
- 2 medium zucchini
- 2 cups cherry tomatoes
- 1 medium red onion
- 3 tbsp olive oil
- 1 lemon
- 0.5 cup crumbled feta
- 1 tsp dried oregano
Instructions
- 1Preheat the oven to 425°F. Line a large sheet pan with parchment. Finely mince the garlic and chop the parsley and mint.
- 2In a large bowl combine the ground lamb, panko, egg, half the garlic, most of the parsley and mint, cumin, coriander, salt, and black pepper. Mix gently with your hands until just combined.
- 3Roll the mixture into 20 equal meatballs about 1.5 inches wide and arrange them on one side of the prepared sheet pan.
- 4Trim and slice the zucchini into half-moons, cut the red onion into wedges, and leave the cherry tomatoes whole. Toss the vegetables with olive oil, remaining garlic, oregano, remaining salt, and a grind of pepper.
- 5Spread the seasoned vegetables on the empty side of the sheet pan in a single layer the meatballs.
- 6Roast for 18 to 22 minutes, flipping the meatballs halfway, until the lamb is browned and cooked through (internal temperature 160°F) and the vegetables are blistered and tender.
- 7Remove the pan from the oven. Squeeze fresh lemon juice over everything and scatter the remaining herbs and crumbled feta across the tray.
- 8Serve family-style straight from the pan, or portion meatballs and vegetables into meal-prep containers. The tray reheats well for high-protein lunches the next day.
