Ingredients
- 1 lb ground beef (90/10)
- 4 cups cooked white or jasmine rice
- 1/4 cup soy sauce
- 3 tbsp brown sugar
- 1 tbsp toasted sesame oil
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp gochujang
- 3 tbsp rice vinegar
- 1 English cucumber, thinly sliced
- 1 tsp sugar
- 4 green onions, sliced
- 1 tbsp toasted sesame seeds
- 1 tbsp neutral oil
- optional toppings kimchi or shredded carrots
Instructions
- 1In a small bowl stir rice vinegar, sugar, and salt until dissolved. Add cucumber slices, toss, and set aside to quick-pickle for at least 10 minutes while you cook.
- 2Whisk soy sauce, brown sugar, sesame oil, half the garlic, ginger, and gochujang in another bowl until the sugar dissolves; this is your sauce.
- 3Heat neutral oil in a large skillet over medium-high heat. Add remaining garlic and cook 20 seconds until fragrant.
- 4Add ground beef, breaking it into small crumbles with a wooden spoon. Cook 5–7 minutes until no pink remains and edges start to caramelize.
- 5Pour the prepared sauce over the beef and simmer 2–3 minutes, stirring constantly, until the liquid reduces into a glossy glaze that coats every crumble.
- 6Taste and adjust with a splash more soy or sugar if needed; remove from heat and fold in half the green onions.
- 7Fluff warm rice into four bowls. Spoon the glazed beef over the rice, then top with drained pickled cucumbers, remaining green onions, sesame seeds, and optional kimchi or carrots.
- 8Serve immediately so the hot beef contrasts with the cool crunchy pickles.
