
Korean Bulgogi Beef Bowl Prep
Bulgogi, whose name means “fire meat,” is Korea’s beloved sweet-savory grilled beef. Thinly sliced steak soaks in soy, sesame, garlic, and pear, then lands over rice with crisp veggies for an easy high-protein dinner bowl.

Ingredients
- 1.75 lb flank steak or sirloin
- 1/3 cup soy sauce
- 3 tbsp brown sugar
- 2 tbsp toasted sesame oil
- 5 garlic cloves
- 1 tbsp fresh ginger
- 1/2 Asian pear or apple
- 6 green onions
- 5 cups cooked jasmine rice
- 1 large cucumber
- 2 cups shredded carrots
- 5 cups spinach
- 1 tbsp sesame seeds
- 2 tbsp gochujang
- 1 tbsp vegetable oil
Instructions
- 1Slice the beef thinly against the grain into bite-size strips and place in a large bowl.
- 2Grate the garlic, ginger, and pear. In a separate bowl whisk soy sauce, brown sugar, sesame oil, grated aromatics, and the white parts of the sliced green onions.
- 3Pour the marinade over the beef, toss well, cover, and refrigerate at least 20 minutes or up to overnight for deeper flavor.
- 4Cook the jasmine rice if not already prepared and keep warm or portion into meal-prep containers.
- 5Heat vegetable oil in a large skillet or wok over high heat until nearly smoking. Add the marinated beef in a single layer (work in batches) and sear 2 to 3 minutes per side until caramelized and just cooked through.
- 6While the beef cooks, thinly slice the cucumber into half-moons and roughly chop the remaining green onion tops.
- 7Wilt the spinach quickly in the hot pan after the beef is removed, 30 to 45 seconds, seasoning with salt.
- 8Build each bowl or prep container with a base of rice, then top with bulgogi beef, wilted spinach, shredded carrots, and cucumber slices.
- 9Drizzle a little gochujang thinned with a splash of water if desired, and finish with sesame seeds and green onion tops.
- 10Cool completely before sealing containers; refrigerate up to 4 days. Reheat the beef and rice portions gently, keeping fresh vegetables cool for contrast.
