Ingredients
- 4 (6 oz each) salmon fillets, skin-on
- 4 tbsp unsalted butter
- 5 garlic cloves, minced
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 3 tbsp fresh parsley, chopped
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 lb asparagus spears, trimmed
- 1 cup cherry tomatoes
- optional pinch red pepper flakes
Instructions
- 1Pat the salmon fillets completely dry with paper towels and season both sides generously with salt, black pepper, and smoked paprika. Let them sit at room temperature 10 minutes while you prep the pan.
- 2Heat a large oven-safe skillet over medium-high heat and add the olive oil. When the oil shimmers, place the salmon skin-side down and sear undisturbed for 4 minutes until the skin is crisp and golden.
- 3Flip the fillets carefully and cook another 2 minutes on the flesh side. Transfer the salmon temporarily to a plate.
- 4Reduce heat to medium and add the butter to the same skillet. Once melted and foaming, stir in the minced garlic and cook 45 to 60 seconds until fragrant but not browned.
- 5Stir in lemon juice, lemon zest, and most of the chopped parsley. Return the salmon to the pan, spooning the garlic butter continuously over the tops so it bastes and glazes.
- 6Nestle the trimmed asparagus and cherry tomatoes the fish. Season the vegetables lightly with salt and red pepper flakes if using.
- 7Cover loosely or transfer the skillet to a 400°F oven for 5 to 7 minutes until the salmon flakes easily and reaches 145°F internally and the asparagus is tender-crisp.
- 8Remove from heat, baste once more with the pan butter, and finish with the remaining parsley. Serve the fillets with the roasted vegetables and extra garlic butter spooned over everything.
