Ingredients

  • 4 (6 oz each) salmon fillets
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 1 tbsp fresh ginger, grated
  • 1 garlic clove, grated
  • 4 cups broccoli florets
  • 4 baby bok choy, halved
  • 8 oz shiitake mushrooms, stemmed
  • 2 tbsp neutral oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp toasted sesame seeds
  • 3 sliced green onions
  • 3 cups cooked short-grain rice for serving

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment paper for easy cleanup.
  2. 2Whisk miso paste, mirin, soy sauce, honey, sesame oil, grated ginger, and grated garlic in a small bowl until smooth and glossy.
  3. 3Pat the salmon fillets dry and place them skin-side down on one side of the sheet pan. Spoon most of the miso glaze over the tops and sides, reserving a little for finishing.
  4. 4Toss broccoli florets, halved bok choy, and shiitake mushrooms with neutral oil, salt, and black pepper. Spread them in a single layer on the remaining space of the pan.
  5. 5Roast for 12 to 15 minutes until the salmon flakes easily with a fork and reaches 145°F in the center, and the vegetables are tender-crisp with browned edges.
  6. 6In the last 2 minutes, switch the oven to broil on high if you want deeper caramelization on the miso glaze; watch closely so the sugars do not burn.
  7. 7Remove the pan and brush the reserved glaze over the hot salmon. Sprinkle everything with toasted sesame seeds and sliced green onions.
  8. 8Plate each fillet over a scoop of warm short-grain rice with a generous share of the roasted vegetables. Spoon any pan juices over the top and serve immediately.
