  • 1 1/2 lb boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 1/4 cups low-sodium chicken broth
  • 6 fresh garlic cloves
  • 3/4 cup grated Parmesan cheese
  • 4 oz reduced-fat cream cheese
  • 3 cups baby spinach
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning

Instructions

  1. 1Pat the chicken dry and cut it into even 1-inch bite-size pieces so it cooks quickly and stays juicy. Season the pieces all over with salt, black pepper, and Italian seasoning.
  2. 2Heat the olive oil in a large deep 12-inch skillet over medium-high heat until it shimmers. Add the chicken in a single layer and sear without moving for 3 to 4 minutes until the undersides turn golden.
  3. 3Flip and cook another 2 to 3 minutes until the chicken is mostly opaque but not fully cooked through. Transfer the chicken to a clean plate and leave the browned bits in the pan.
  4. 4Reduce heat to medium. Add the minced garlic and red pepper flakes to the same skillet and stir for 30 to 45 seconds until fragrant but not browned.
