High-Protein Beef and Broccoli

Ingredients

  • 1½ lb flank steak or sirloin, thinly sliced against the grain
  • ⅓ cup soy sauce or tamari
  • 2 Tbsp cornstarch
  • 2 Tbsp brown sugar
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 Tbsp avocado oil or neutral oil
  • 5 cups broccoli florets
  • ¾ cup low-sodium beef broth
  • 2 Tbsp oyster sauce
  • 1 Tbsp rice vinegar
  • ¼ tsp red pepper flakes
  • 3 green onions, sliced
  • 1 Tbsp toasted sesame seeds

Instructions

  1. 1Place the thinly sliced beef in a medium bowl. Add half the soy sauce, the cornstarch, and a drizzle of sesame oil. Toss until every strip is lightly coated and set aside to marinate 10 minutes while you prep the rest.
  2. 2In a small bowl whisk together the remaining soy sauce, brown sugar, beef broth, oyster sauce, rice vinegar, grated ginger, minced garlic, and red pepper flakes to make the stir-fry sauce.
  3. 3Heat a large wok or 12-inch skillet over high heat until very hot. Add one tablespoon of oil and swirl to coat.
  4. 4Add the marinated beef in a single layer (work in two batches if needed to avoid steaming). Sear undisturbed 1 minute, then stir-fry until just browned on the edges but still pink in spots, 2 to 3 minutes total. Transfer beef to a clean plate.
  5. 5Add the remaining oil to the same hot pan. Toss in the broccoli florets and stir-fry 2 minutes until bright green. Splash in two tablespoons of water, cover briefly, and steam-crisp the broccoli until tender-crisp with charred spots, about 2 minutes more.
  6. 6Return the beef and any juices to the pan. Pour the prepared sauce over everything and toss constantly as it comes to a hard simmer.
  7. 7Cook 1 to 2 minutes until the sauce thickens into a glossy coat that clings to the beef and broccoli. Taste and adjust saltiness if desired.
  8. 8Remove from heat. Scatter sliced green onions and toasted sesame seeds over the top. Serve immediately over rice or cauliflower rice, or portion into meal-prep containers.
