  • 3 medium zucchini

Instructions

  1. 1Pat the pork chops dry and season both sides generously with salt and pepper. Let them sit at room temperature 15 minutes while you prep the grill and produce so they cook evenly.
  2. 2Whisk balsamic vinegar, honey, Dijon, minced garlic, chopped thyme, and olive oil into a quick glaze. Set half aside for serving and brush the rest lightly over the chops.
  3. 3Preheat a gas or charcoal grill to medium-high heat, about 400–450°F. Clean and oil the grates well so the peaches and zucchini release cleanly.
