Ingredients

  • 1 1/2 lb, cut into 1-inch pieces boneless skinless chicken thighs
  • 2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 1/4 tsp kosher salt
  • 2 tbsp avocado or olive oil
  • 1, diced yellow onion
  • 4, minced garlic cloves
  • 2 peppers, minced + 1 tbsp sauce chipotle peppers in adobo
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 (15 oz) can, drained and rinsed black beans
  • 1 cup frozen corn
  • 3/4 cup chicken broth
  • 4 oz, cubed and softened cream cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 4, cut into 1-inch strips corn tortillas
  • 1/3 cup chopped fresh cilantro
  • 1, cut into wedges lime

Instructions

  1. 1Toss the chicken pieces with chili powder, cumin, and salt until evenly coated. Heat oil in a large deep 12-inch skillet over medium-high heat. Add the chicken in a single layer and cook 5–6 minutes, stirring once, until browned on most sides and nearly cooked through; transfer to a plate.
  2. 2Add the remaining tablespoon oil to the skillet. Sauté the diced onion for 4 minutes until softened and lightly golden at the edges. Stir in the garlic, minced chipotles, and adobo sauce; cook 60 seconds until the kitchen smells smoky and fragrant.
  3. 3Pour in the fire-roasted tomatoes (with juices), black beans, corn, chicken broth, and remaining salt. Scrape up any browned bits, bring to a simmer, and cook 3 minutes so the flavors marry and the liquid reduces slightly.
  4. 4Return the chicken and any juices to the skillet. Reduce heat to medium-low and stir in the cubed cream cheese until it melts completely into a silky, slightly spicy sauce, about 2 minutes.
  5. 5Sprinkle half the Monterey Jack over the surface, then scatter the tortilla strips evenly on top. Finish with the remaining cheese. Cover the skillet and cook 4–5 minutes until the cheese is fully melted and the tortilla strips soften into cheesy ribbons.
  6. 6Remove from heat, uncover, and let rest 2 minutes. Shower with chopped cilantro and serve straight from the skillet with lime wedges for squeezing. Offer extra hot sauce at the table for heat lovers.
