  • 1 1/4 lb boneless skinless chicken breasts
  • 8 small flour or corn tortillas
  • 3/4 cup Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded low-moisture mozzarella
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 tbsp olive oil or cooking spray
  • 1/4 cup fresh basil leaves

  • 2 tbsp hot honey or chili crisp optional drizzle

Instructions

  1. 1Preheat the oven to 425°F and line a large sheet pan with parchment. Lightly oil or spray the parchment so the tacos release cleanly later.
  2. 2Slice each chicken breast horizontally into thin cutlets, then pound gently between plastic wrap to an even 1/4-inch thickness. Season both sides with salt, pepper, garlic powder, and oregano.
  3. 3Beat the egg in a shallow bowl. In a second bowl combine the breadcrumbs and grated Parmesan. Dip each cutlet in egg, then press firmly into the breadcrumb mixture so both sides are well coated.
  4. 4Warm a large skillet over medium heat with a thin film of oil. Pan-sear the breaded cutlets 2 to 3 minutes per side until golden and just cooked through; work in batches if needed so they do not steam.
  5. 5Lay the tortillas flat on the prepared sheet pan. Place one piece of cooked chicken on each tortilla and press down firmly with a spatula or the bottom of a measuring cup to smash and flatten slightly so the chicken adheres.
  6. 6Spoon a thin layer of marinara over each smashed chicken piece, then top generously with shredded mozzarella. The cheese should cover the chicken edges so it melts into the tortilla.
  7. 7Bake 8 to 10 minutes until the cheese is fully melted, bubbling, and spotted golden in places and the tortilla edges are crisp.
  8. 8Remove the pan and immediately scatter torn fresh basil over the hot tacos. Optional: finish with a light drizzle of hot honey or chili crisp for the viral sweet-heat finish.
