Ingredients

  • 1 1/2 lb (4 medium) boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup drained and sliced sun-dried tomatoes in oil
  • 1/2 cup grated Parmesan cheese
  • 4 fresh garlic cloves
  • 1 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • optional for garnish fresh basil

Instructions

  1. 1Pat the chicken breasts dry and, if thick, pound them gently to an even 3/4-inch thickness so they cook uniformly. Season both sides generously with salt, black pepper, and Italian seasoning.
  2. 2Heat the olive oil in a large 12-inch skillet over medium-high heat until hot. Place the chicken in the pan without crowding and sear 4 to 5 minutes until deep golden on the first side.
  3. 3Flip the chicken and cook another 4 to 5 minutes until the second side is golden and the internal temperature reaches about 160°F. Transfer to a plate; it will finish in the sauce.
  4. 4Reduce heat to medium. Add the minced garlic to the same skillet and cook 30 to 45 seconds, stirring constantly, until fragrant and lightly golden.
  5. 5Add the sliced sun-dried tomatoes and stir for 1 minute to release their flavor into the pan drippings.
  6. 6Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet. Let it bubble softly for 2 minutes to thicken slightly.
  7. 7Stir in the grated Parmesan until the sauce turns smooth and glossy. Taste and add a pinch more salt or pepper if needed.
  8. 8Return the chicken and any resting juices to the skillet, spooning sauce over the tops. Simmer uncovered on low for 3 to 4 minutes until the chicken reaches 165°F and the sauce clings nicely.
  9. 9Remove from heat. If using, tear fresh basil over the top. Serve the chicken straight from the skillet with plenty of creamy sun-dried tomato sauce spooned over each piece.
