- 1 1/2 lb (4 medium) boneless skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup drained and sliced sun-dried tomatoes in oil
- 1/2 cup grated Parmesan cheese
- 4 fresh garlic cloves
- 1 tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning

Instructions
- 1Pat the chicken breasts dry and, if thick, pound them gently to an even 3/4-inch thickness so they cook uniformly. Season both sides generously with salt, black pepper, and Italian seasoning.
- 2Heat the olive oil in a large 12-inch skillet over medium-high heat until hot. Place the chicken in the pan without crowding and sear 4 to 5 minutes until deep golden on the first side.
- 3Flip the chicken and cook another 4 to 5 minutes until the second side is golden and the internal temperature reaches about 160°F. Transfer to a plate; it will finish in the sauce.
- 4Reduce heat to medium. Add the minced garlic to the same skillet and cook 30 to 45 seconds, stirring constantly, until fragrant and lightly golden.
- 5Add the sliced sun-dried tomatoes and stir for 1 minute to release their flavor into the pan drippings.
- 6Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet. Let it bubble softly for 2 minutes to thicken slightly.
- 7Stir in the grated Parmesan until the sauce turns smooth and glossy. Taste and add a pinch more salt or pepper if needed.
- 8Return the chicken and any resting juices to the skillet, spooning sauce over the tops. Simmer uncovered on low for 3 to 4 minutes until the chicken reaches 165°F and the sauce clings nicely.
- 9Remove from heat. If using, tear fresh basil over the top. Serve the chicken straight from the skillet with plenty of creamy sun-dried tomato sauce spooned over each piece.
