Ingredients
- 1 1/2 lb sirloin or ribeye steak, cut into 1-inch cubes
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 4 fresh thyme sprigs
- 1 1/4 tsp kosher salt
- 1 tsp coarsely ground black pepper
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
- 3 tbsp fresh parsley, chopped
- for serving lemon wedges
Instructions
- 1Pat the steak cubes thoroughly dry with paper towels. Season generously on all sides with salt, black pepper, and smoked paprika, then let them sit at room temperature for 10 minutes while you prep the garlic and herbs.
- 2Heat a large cast-iron or heavy stainless skillet over high heat until very hot, about 2 minutes. Add the olive oil and swirl.
- 3Add the steak cubes in a single layer without crowding; work in two batches if needed. Sear undisturbed for 90 seconds until a deep brown crust forms on the first side.
- 4Flip the pieces and sear another 60 to 90 seconds for medium-rare (internal 130–135°F) or 2 minutes for medium. Transfer seared bites to a plate and tent loosely with foil.
- 5Reduce heat to medium-low. Add the butter to the same skillet and let it melt and foam.
- 6Stir in the minced garlic and thyme sprigs; cook 45 to 60 seconds, scraping up the browned bits, until the garlic is fragrant and the butter turns lightly golden.
- 7Return the steak bites and any juices to the skillet. Toss continuously for 30 to 45 seconds so every piece is coated in the garlic butter.
- 8Remove from heat, discard the thyme sprigs, and sprinkle with chopped parsley. Squeeze a lemon wedge over the top if desired.
- 9Serve immediately straight from the skillet or plated with the pan juices spooned over, ideal alongside a simple green salad or roasted broccoli for a full keto plate.
