Ingredients

  • 1 large (about 12 oz) sweet potato
  • 1/2 cup sweet red bean paste
  • 1 1/4 cups glutinous rice flour
  • 1/4 cup regular rice flour
  • 3/4 cup hot water
  • 2 tbsp granulated sugar
  • 1 tbsp coconut oil
  • 1 tbsp toasted black sesame seeds
  • 1 pinch of salt
  • 2 tbsp honey for drizzling

Instructions

  1. 1Pierce the sweet potato and microwave or roast until completely soft, then scoop out the flesh and mash until smooth.
  2. 2Stir the warm mashed sweet potato with sugar, salt, and coconut oil until the mixture is silky and slightly sticky.
  3. 3Combine the glutinous rice flour and regular rice flour in a bowl, then gradually add hot water while stirring with a spatula until a soft dough forms.
  4. 4Knead the dough briefly on a lightly floured surface until it is smooth, pliable, and no longer sticks to your hands.
  5. 5Divide the dough into 16 equal pieces and flatten each into a small disc with your palm.
  6. 6Place a small spoonful of sweet red bean paste in the center of each disc, then pinch and seal tightly into smooth balls.
  7. 7Bring a pot of water to a gentle boil and cook the dumplings in batches for 4 to 5 minutes until they float and look slightly translucent.
  8. 8Lift them out with a slotted spoon and roll immediately in toasted black sesame seeds while still damp so the seeds stick.
  9. 9Arrange on a plate, drizzle lightly with honey, and serve warm for the best chewy texture.
  10. 10These reheat nicely by steaming for 2 minutes if made ahead.
