Ingredients

  • 6 medium ripe nectarines
  • 8 tbsp unsalted butter
  • 1/2 cup light brown sugar
  • 2 tbsp granulated sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup sliced almonds
  • 1/2 tsp kosher salt
  • 1/4 tsp ground ginger
  • 1 tbsp fresh lemon juice
  • 2 tsp cornstarch
  • for serving vanilla ice cream or whipped cream

Instructions

  1. 1Preheat the oven to 375°F. Place a 9- or 10-inch oven-safe skillet over medium heat and add the butter. Cook, swirling, until the butter foams then turns amber and smells toasty, 3 to 5 minutes. Pour most of the brown butter into a mixing bowl, leaving a tablespoon in the skillet.
  2. 2Pit and slice the nectarines into wedges. Toss them in a bowl with granulated sugar, lemon juice, and cornstarch until glossy.
  3. 3Spread the nectarine mixture into the skillet with the reserved brown butter and cook over medium heat just until the fruit releases juices and begins to soften, 2 to 3 minutes. Remove from heat.
  4. 4To the bowl of brown butter add brown sugar, flour, oats, almonds, salt, and ginger. Stir with a fork until the mixture forms irregular clumps of streusel.
  5. 5Scatter the streusel evenly over the nectarines in the skillet, covering most of the fruit but leaving a few gaps for juices to bubble through.
  6. 6Bake on the center rack until the topping is deeply golden, nuts are toasted, and fruit juices are thick and bubbling at the edges, 25 to 30 minutes.
  7. 7Cool the crisp in the skillet on a rack for 10 to 15 minutes so it thickens slightly yet stays warm.
  8. 8Spoon into bowls and top with vanilla ice cream or softly whipped cream. The residual heat will create perfect melty pools.
