Ingredients
- 3 medium Gala apples
- 1 3/4 cups all-purpose flour

- 1/2 tsp baking soda

- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup whole milk
- 1 cup powdered sugar
- 2 tbsp apple cider or milk
Instructions
- 1Heat the oven to 350°F and line a rimmed quarter sheet pan with parchment, leaving a slight overhang for easy lifting.
- 2Peel and dice the Gala apples into 1/2-inch pieces and pat them dry with a towel so excess moisture does not sog the batter.
- 3Whisk the flour, baking powder, baking soda, most of the cinnamon, and salt in a bowl until evenly combined.
- 4In a large bowl beat the softened butter with both sugars until light and fluffy, about 2 minutes, then beat in the eggs one at a time and the vanilla.
- 5Alternate adding the dry mixture and the sour cream plus milk, mixing just until no dry streaks remain; fold in the diced apples.
- 6Spread the thick batter evenly into the prepared pan, smoothing the top with an offset spatula so it bakes level.
- 7Bake 28 to 34 minutes until the center springs back, a toothpick comes out with a few moist crumbs, and the edges are golden brown.
- 8Cool the slab in the pan 15 minutes, then lift out onto a rack.
- 9Whisk the powdered sugar with the remaining cinnamon and enough cider to make a thick pourable glaze; drizzle over the slightly warm cake.
- 10Let the glaze set 10 minutes, then cut into neat rectangles for sharing or packing in lunchboxes.
