  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2/3 cup whole milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 tbsp melted unsalted butter
  • 2 cups diced tart apples
  • 1 cup powdered sugar
  • 2 tbsp milk for glaze
  • as needed cooking spray

Instructions

  1. 1Preheat the oven to 400°F and line a large rimmed sheet pan with parchment paper, then mist lightly with cooking spray.
  2. 2In a large bowl whisk the flour, granulated sugar, baking powder, cinnamon, and salt until evenly combined.
  3. 3In a measuring cup stir together the whole milk, egg, vanilla, and melted butter, then pour into the dry ingredients and mix just until a thick batter forms.
  4. 4Fold the diced apples into the batter so every piece is coated; the mixture should be scoopable and studded with fruit.
  5. 5Using a 1/4-cup measure, drop 8 mounds of batter onto the prepared sheet pan, spacing them 2 inches apart so they can spread.
  6. 6Bake 14 to 17 minutes until the fritters are puffed, golden at the edges, and a toothpick inserted in the center comes out clean.
  7. 7While the fritters bake, whisk the powdered sugar with the glaze milk until smooth and pourable; add a drop more milk if needed.
  8. 8Remove the sheet pan and let the fritters cool 5 minutes so the exteriors firm slightly.
  9. 9Drizzle or brush the warm fritters generously with the cinnamon-kissed glaze so it sets into a thin crackly shell.
  10. 10Serve immediately while still warm and crisp on the outside with soft apple centers.
