Ingredients

  • 3 medium ripe peaches
  • 2 cups full-fat cottage cheese
  • 1/2 cup plain Greek yogurt
  • 1/3 cup honey
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 pinch pinch of salt
  • for garnish fresh mint leaves

Instructions

  1. 1Pit the peaches and dice them into bite-size pieces, setting aside a few pretty slices for topping later. Toss the diced peaches with a spoonful of the honey and the lemon juice in a bowl so they release a little juice while you build the jars.
  2. 2Stir the graham cracker crumbs with the melted butter and salt until the mixture looks like wet sand and holds together when pressed. Divide the crumb mixture evenly among four small jars or glasses and press firmly into an even base layer with the back of a spoon.
  3. 3Add the cottage cheese, Greek yogurt, remaining honey, and vanilla to a blender or food processor. Blend on high until completely smooth and creamy, scraping down the sides once so no curds remain; the mixture should look like classic cheesecake filling.
  4. 4Spoon half of the creamy filling over the graham bases, smoothing the tops. Scatter half of the honeyed diced peaches over the filling, letting a little juice drip in for flavor.
  5. 5Add the remaining filling, then finish with the rest of the peaches and the reserved pretty slices on top. Tap the jars gently on the counter to settle any air pockets.
  6. 6Cover the jars and refrigerate at least 2 hours (or up to overnight) so the filling firms and the flavors meld. The longer chill gives a cleaner spoonable texture.
