Ingredients

  • 1 cup graham cracker crumbs
  • 3 Tbsp unsalted butter, melted
  • 2 Tbsp plus 2 Tbsp light brown sugar
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 large Gala or Honeycrisp apple, peeled and finely diced
  • 1/2 tsp ground cinnamon
  • 1 tsp fresh lemon juice
  • 1 pinch pinch kosher salt

Instructions

  1. 1Stir graham crumbs, melted butter, and brown sugar until the mixture holds together when pressed. Divide among four 8-ounce jars and press firmly into an even crust layer.
  2. 2In a medium bowl beat the softened cream cheese with powdered sugar and vanilla until completely smooth and fluffy, about 2 minutes with a hand mixer.
  3. 3In a separate cold bowl whip the heavy cream to medium-stiff peaks. Gently fold the whipped cream into the cream-cheese mixture until no white streaks remain.
  4. 4Spoon the cheesecake filling over the crusts, smoothing the tops. Chill the jars while you make the topping so the filling firms.
  5. 5Combine the diced apple, remaining brown sugar, cinnamon, lemon juice, and salt in a small skillet over medium heat. Cook, stirring often, until the apple softens and the juices turn glossy and syrupy, 5 to 7 minutes.
  6. 6Cool the apple topping 10 minutes so it will not melt the cream layer. Spoon the spiced apples evenly over each jar.
  7. 7Cover and refrigerate at least 1 hour or up to overnight for the cleanest layers and chilled texture.
  8. 8Serve straight from the fridge with a long spoon. The contrast of cool creamy filling and warm-spiced apple makes these ideal make-ahead September desserts.
