Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp melted unsalted butter
  • 1 tbsp light brown sugar
  • 3/4 cup dulce de leche or thick caramel sauce
  • 3 medium ripe bananas
  • 1 1/4 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp dark chocolate shavings
  • pinch flaky sea salt

Instructions

  1. 1In a small bowl stir the graham cracker crumbs, melted butter, and brown sugar until the mixture resembles wet sand and holds together when pinched.
  2. 2Divide the crumb mixture evenly among 4 parfait glasses or jars (about 1/4 cup each) and press firmly into an even base layer with the back of a spoon.
  3. 3Spoon 2 to dulce de leche over each crumb base and gently spread to the edges.
  4. 4Peel and slice the bananas into 1/4-inch rounds. Arrange a single layer of banana slices over the caramel in each glass, overlapping slightly.
  5. 5In a chilled bowl whip the heavy cream, powdered sugar, and vanilla with a hand mixer on medium-high until medium-stiff peaks form, about 2 to 3 minutes; do not overwhip.
  6. 6Pipe or spoon a generous swirl of whipped cream over the bananas in each glass, mounding it slightly in the center.
  7. 7Drizzle any remaining caramel lightly over the cream, then finish with dark chocolate shavings and a tiny pinch of flaky sea salt.
  8. 8Cover and refrigerate at least 45 minutes (or up to 4 hours) so the crumbs soften slightly and flavors meld. Serve cold with long spoons.
