Ingredients
- 1 cup graham cracker crumbs
- 4 tbsp melted unsalted butter
- 1 tbsp light brown sugar
- 3/4 cup dulce de leche or thick caramel sauce
- 3 medium ripe bananas
- 1 1/4 cups heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 2 tbsp dark chocolate shavings
- pinch flaky sea salt
Instructions
- 1In a small bowl stir the graham cracker crumbs, melted butter, and brown sugar until the mixture resembles wet sand and holds together when pinched.
- 2Divide the crumb mixture evenly among 4 parfait glasses or jars (about 1/4 cup each) and press firmly into an even base layer with the back of a spoon.
- 3Spoon 2 to dulce de leche over each crumb base and gently spread to the edges.
- 4Peel and slice the bananas into 1/4-inch rounds. Arrange a single layer of banana slices over the caramel in each glass, overlapping slightly.
- 5In a chilled bowl whip the heavy cream, powdered sugar, and vanilla with a hand mixer on medium-high until medium-stiff peaks form, about 2 to 3 minutes; do not overwhip.
- 6Pipe or spoon a generous swirl of whipped cream over the bananas in each glass, mounding it slightly in the center.
- 7Drizzle any remaining caramel lightly over the cream, then finish with dark chocolate shavings and a tiny pinch of flaky sea salt.
- 8Cover and refrigerate at least 45 minutes (or up to 4 hours) so the crumbs soften slightly and flavors meld. Serve cold with long spoons.
