  • 3/4 cup almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp fine sea salt

  • 1/2 cup unsweetened applesauce
  • 3 tbsp melted coconut oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips

Instructions

  1. 1Preheat the oven to 350°F and line a mini muffin tin with paper liners or lightly grease twenty-four cups.
  2. 2In a large bowl whisk together the protein powder, almond flour, cocoa powder, baking powder, and salt until no streaks remain.
  3. 3In a separate bowl beat the eggs, then stir in the applesauce, melted coconut oil, maple syrup, and vanilla until fully combined and glossy.
  4. 4Pour the wet mixture into the dry ingredients and fold gently with a spatula just until a thick batter forms; avoid overmixing.
  5. 5Fold in most of the chocolate chips, reserving a small handful for topping.
  6. 6Scoop heaping teaspoons of batter into each prepared mini-muffin cup, filling them three-quarters full.
  7. 7Press a few reserved chocolate chips onto the top of each bite for a bakery finish.
  8. 8Bake for eleven to thirteen minutes until the tops look set and a toothpick inserted in the center comes out with a few moist crumbs.
