Ingredients

  • 2 cups ripe mango chunks
  • 1 1/2 cups plain Greek yogurt
  • 3 tbsp honey
  • 1 tsp ground cardamom
  • 1/8 tsp pinch of saffron threads

Instructions

  1. 1Add the mango chunks to a blender and puree until completely smooth and free of fibrous bits.
  2. 2Pour in the Greek yogurt, honey, ground cardamom, and saffron; blend again on medium until the mixture is silky and pale golden with no streaks.
  3. 3Taste and adjust sweetness if needed by blending in a little more honey, keeping the cardamom fragrance forward.
  4. 4Pour the lassi base evenly into six popsicle molds, leaving a small gap at the top for expansion.
  5. 5Tap each mold firmly on the counter to release air bubbles, then insert wooden sticks straight down the center.
  6. 6Freeze the molds on a level shelf for at least 6 hours or overnight until the pops are solid and pull cleanly from the sides.
  7. 7To unmold, run the outside of each mold under cool water for 10–15 seconds, then gently tug the stick to release.
  8. 8Serve immediately or wrap individually in parchment and return to the freezer for grab-and-go high-protein treats.
